This Memorial Day was a nice and relaxing one, thanks to Mister rain cloud. We finally had the chance to enjoy a lazy day and do absolutely nothing. And by nothing, I mean we still managed to squeeze in lunch at Panera, trips to Goodwill and Crate and Barrel and cooking up a huge feast. But for us, that’s nothing. Most of the day was spent catching up on some reading and being (somewhat) lazy on the sectional. Ahh, holidays.
Of course we managed to cook up a rocking meal to commemorate this Memorial Day. Why? Because that’s what we do. EAT. And eat well. This holiday we cooked up Scott’s special ribs (special because they’re marinated in honey), corn salad with walnuts and feta, and mac and cheese with breadcrumbs. Is your mouth salivating yet? Mine is, and I just finished eating it.
Our delicious sides hailed from none other than Real Simple Magazine (oh my gosh, Audrey is talking about Real Simple again? Shoot me now!). The corn salad was a real kicker with fresh jalapenos mixed in, and the cheesy mac and cheese was a great non-bake version. Both side dishes were super yummy – I’m a big proponent of RS recipes (shocker, right?) because they’ve yet to disappoint us! Feel free to try these bad boys out for yourself.
